INGREDIENTS
1.5 lbs flat iron steak
1.5 tsp kosher salt
1 tsp freshly ground black pepper
1 tbsp high-smoke-point oil
4 tbsp unsalted butter
4 cloves garlic
2 sprigs fresh thyme
1 tsp crushed red pepper flakes
INSTRUCTIONS
Pat the steak dry and season with 1.5 tsp kosher salt and 1 tsp freshly ground black pepper. Let sit at room temperature for 20–30 minutes.
Heat a cast-iron skillet over medium-high heat until smoking hot. Add 1 tbsp high-smoke-point oil and sear steak for 4–5 minutes per side.
Reduce heat to medium, add 4 tbsp unsalted butter, 4 smashed garlic cloves, and 2 sprigs fresh thyme. Baste the steak with butter for 2 minutes.
Transfer to a cutting board, rest for 5 minutes, then slice against the grain.
