INGREDIENTS

All measurements are approximate. Mess around and see what works.

Make the Porridge:

1/8 - 1/4 c chia seeds (*maybe the lynchpin to the whole thing. Everything else is basically optional)

shredded coconut

4 or 5 scoops of collagen

mulberries or dates, or any other sweeteners

handful or two of oats (more for “oatmeal” // life you’re feeling keto, leave out and make NOatmeal // you can also use buckwheat if you’ve got that around)

good pinch of salt

liberal cinnamon

coconut milk for extra fatty goodness

tsome nut/seed mix coarsely chopped or ground (pumpkin, hemp, walnut…) maca powder

Put the chia seeds in a medium pot and start simmer with a good amount of water (1 or 2 cups) while adding other ingredients. Add more water (ideally hot from the kettle) as necessary to get your proper porridge consistency

Make the Dough:

1-2c or so of almond flour (or combo with other flours like oat)

3/4? c tapioca flour

big scoop of almond butter

~2 tsp baking powder

1 tsp baking soda

INSTRUCTIONS

As with nearly all of my recipes, this one changes every time. It is a two part recipe which originally got its name because I make the cookies FROM leftover breakfast, to be eaten whenever. However, they are also really good FOR breakfast. (Especially re-toasted with butter or almond butter on them)

So, with that in mind— I usually start with a large oatmeal/porridge and eat that on day 1 then make cookies with leftovers on day 2, but you can also just make the dough right away from the porridge.

All measurements are approximate. Mess around and see what works.

mix the dry ingredients into the porridge then add…

splash of cider vinegar

maple syrup or coconut sugar to taste

2 tbsp melted coconut oil

raisins + sunflower seeds

more nuts or chocolate chips whatever

Bake at 350 degrees for about 25min
